I am a big fan of BBC Good Food because of its wide variety of reliable recipes. Today I’m sharing with you another great recipe which my sister-in-law and I tried and tested – Chicken with creamy bacon penne.
1 tbsp olive oil
2 boneless skinless chicken breasts
100g bacon bits
4 tbsp dry white wine
100g frozen peas
5 tbsp double cream
220g cooked penne
1. Cook the penne according to instructions on the packet.
2. Heat the oil in a deep nonstick frying pan, then add the chicken breasts and bacon bits. Leave to cook over a high heat for 4 minutes.
3. Turn the chicken over in the pan, give the bacon bits a stir, then pour in the wine and let it bubble over a high heat until it has virtually evaporated. Now add the peas, the cream and penne, season, then stir well. Cover the pan and cook for 4 minutes more until the chicken is cooked all the way through. Serve straight away.
It was creamy but light and very delicious – according to Daniel. I read some online comments that criticised the dish for being too bland. All I added was pepper (no salt!) and it was fine by us. The smoked bacon was salty enough to add flavour to this simple, easy to cook dish.
